Menu Plan Monday- Aug 23


So I am posting this on Aug 24th. Things in my brain were a little hectic yesterday and I am late getting this all together. Here is what we are having this week. My goal is to use only meat that I already have in the freezer at home- saving money and forcing me to clean out the freezer all at the same time. We did shuffle some things around last week but mostly, we stayed on track. Hopefully, this week will be more of the same.

Monday- pizza at Cub Scout swim party
Tuesday- Hamburger Casserole
Wednesday- dinner at church
Thursday- 30-minute paella
Friday- tacos

Menu Plan Monday-Aug. 16th

I am very excited about this weeks menu plan. All of our activities are in full swing so this week will be a good test of how successful I will be at staying with what I have planned. Scouts, soccer practice, dance and a PTO meeting will all try to throw me off my game, but I am determined to stay the course.

Monday- Mediterranean chicken over angel hair pasta and a side of green beans
Tuesday- Shrimp Tacos and a side of black bean and corn salsa
Wednesday- eat at church
Thursday- pepper steak over rice
Friday- pork scallopini with some sort of vegetable to be determined by what is in the freezer
Saturday- leftover buffet

Back to school week


It’s back to school week at the Insanity Cooks household. My 8 year old will be starting third grade on Thursday and my baby girl (who just turned 5) will be starting Kindergarten on Friday. Time to get back in the swing of things and that means back to full time meal planning and all the ins and outs that go with trying to fit home cooked meals into our busy and hectic schedule. Combine the excitement preparing for school with the fact that it is going to be 100 degrees every day this week, and I am trying my best to get organized. My goals for the week are 1) to cook every night we are going to be home this week and 2) not have to turn on the oven.

My menu plan for the week looks something like this:
Monday- Hamburger stroganoff and veggies
Tuesday- something with chicken- looking for suggestions
Wednesday- dinner at church
Thursday- roast in the crockpot, rolls, veggies
Friday- penne pasta skillet

The weekend will have to take care of itself as I am still waiting to see what our plans are going to end up being. As hot as it is, we will probably just want to sit in the house and eat ice cream all day!!

Menu Plan Monday


This is my first week to post my menu plan!! Since none of us eats lunch at home, I will just be posting dinners.

Monday- Tater Tot Casserole (recipe later in the week), zucchini corn saute

Tuesday- some sort of chicken in the crockpot- I will update when I find an inspiring recipe

Wednesday- Church

Thursday- Salisbury Steak, mashed potatoes, some green vegetable

Friday- Steak for the adults, chicken for the kids, grilled veggies, garlic toast

Hopefully, each day I will have a recipe posted for you along with pics, likes and dislikes, and the grade from the Insanity Cooks family.

Back in the kitchen tonight

Wednesday is my night off in the kitchen, but tonight I will be back at it. I will keep the contents of tonights meal a secret until I can write about them in detail tomorrow. I will have another cheap and easy recipe to share. I have been so hungry today, so I have been thinking about all the things I want to cook in the near future. This past weekend, we were watching an episode of Throwdown with Bobby Flay and Bobby was going to challenge a guy that makes Eggplant Parmesan. As soon as I can get to a produce stand this weekend, you better believe that will be in my meal plan somewhere. This is a dish that I already love to make, but now I can’t get it off my mind.

There are so many great food blogs out there in blogland. I have been trying to spend some time this week visiting around and have found lots of great bloggers and lots of good food. One of the things I hope to bring to you next week is Menu Plan Monday over at I’m an Organizing Junkie. I have had a blast looking at everyone’s meal plans and have gotten lots of good ideas. This is a great blog and I hope you will go on over and say hi.
