This weekend we had our end of the season cookout for the coed softball team Big Daddy and I are members of (he plays and I am head cheerleader/fill in player when the options are either I play or they have to forfeit the game). Our host asked that we bring a side dish and since I was going to be pressed for time I thought I would debut a new super easy recipe. My sister-in-law made this dip a few months back at a family get together, and it has quickly become our new favorite. I am sorry that I don’t have a picture, but it got eaten rather quickly and I missed my opportunity.
2 cans Mexicorn drained
1 can Rotel drained
1 package of dry ranch dressing
1 cup of mayonnaise
1 cup sour cream
Mix all ingredients and refrigerate. I did use store brand corn and Rotel. I would also suggest serving with corn chips such as Frito’s Scoops.
